5 Ingredient Courgette Dip
2tbsp extra virgin olive oil, plus extra to drizzle
2 courgettes, coarsely grated
2 garlic cloves, crushed
Finely grated zest 1 lemon
250g Greek yoghurt
1tsp chilli flakes
Flatbreads or bread to serve
1 Heat oil in a frying pan over low heat. Add the courgette and fry for 10min until soft, stirring occasionally.
2 Stir through the garlic, lemon zest, salt and pepper and cook for 2min.
3 Spread the yoghurt on a plate and top with the courgette mixture and sprinkle over the chilli flakes. Serve with bread or flatbread to scoop up!
