Spicy Clementine Margarita

I’ve added a festive twist to the popular tequila cocktail. Use freshly squeezed orange juice, if you prefer.

FOR THE COCKTAIL

1 fresh jalapeño chilli

300ml tequila

150ml Cointreau

150ml clementine juice, freshly squeezed

50ml lime juice, freshly squeezed

TO SERVE

Ice cubes

1 fresh jalapeño chilli, sliced

1 For the cocktail, slice the chilli in 1⁄2 lengthways, add to a large jug and squash a few times with the end
of a rolling pin.

2 Stir in remaining cocktail ingredients. Fill 6 short tumblers with ice, then strain in the cocktail. Garnish with jalapeño slices and serve.

GET AHEAD Mix the cocktail up to 2hr ahead. Cover and chill. Complete recipe to serve.
